Tahini-Turmeric Cauliflower from Trader Joe’s

Just in time for a Father’s Day picnic or a 4th of July gathering. This Tahini-Turmeric Cauliflower from Trader Joe’s – well, made from ingredients from Trader Joe’s- makes a great side dish!

Trader Joe’s makes it super easy to put this dish together quickly with its already cut-up cauliflower. All you have to do is turn on the oven, put a few ingredients together to make the sauce, pour the sauce over the cauliflower and then bake it. EASY!

I made this a couple of nights ago for dinner to go with a lentil salad and was so happy to find that there was some leftover in the fridge today. It made a great snack.

This dish could also be blended with Trader Joe’s Steamed Lentils to make a main entree.

Cauliflower contains antioxidents (antioxidents play a vital role in anti-aging and keeps you young and they help protect you from heart disease, cancer and other diseases).  Turmeric is helpful with inflammation so, not only is the dish pretty, it’s good for you!

Please note that Trader Joe’s Rice Vinegar contains no sugar vs. regular seasoned rice vinegar, which does. If you are substituting seasoned rice vinegar for rice vinegar, omit the maple syrup.

This dish is plant-based, vegan and gluten-free.

 

Tahini-Tumeric Cauliflower

Serves 4

non-stick cooking spray

1/4 cup TJ’s Rice Vinegar

2 tablespoons TJ’s Organic Tahini

2 teaspoons Trader Joe’s Maple Syrup

1 teaspoon ground coriander

1/2 teaspoon ground Trader Joe’s Turmeric

1/2 teaspoon sea salt

Generous pinch of red pepper flakes, depending on your taste

5 cups bite-size cauliflower florets (1 1/2 packages Trader Joe’s Cauliflower Florets or 18 ounces cauliflower), cut into smaller pieces if desired

 

Instructions

Preheat the oven to 400ºF. Lightly coat a baking sheet with cooking spray or use parchment paper or a silicone baking mat.

Blend the vinegar, tahini, maple syrup, coriander, turmeric, salt and pepper flakes with a whisk or place in a mini blender and blend. Put the cauliflower in a large bowl and pour the mixture over the cauliflower; stir well to coat.

Place the cauliflower in a single layer on the baking sheet and bake for 20 minutes or until desired tenderness. Serve warm or at room temperature.

Per serving:

118 calories, 4.25 g fat, 312 mg sodium, 0.25 g carbohydrate, 3.75 g fiber, 4 g protein
