Spinach Mushroom Curry from Trader Joe’s

 

Spinach Mushroom Curry from Trader Joe’s – made super easily and quickly by using shortcut ingredients: already sliced mushrooms, canned garbanzo beans, curry simmer sauce, etc.

Prepare it in just a few  minutes! Really!

It’s delicious!

I was preparing some meals from my cookbook, ” Quick and Healthy Meals from Trader Joe’s” for my “Cooking for One or Two from Trader Joe’s” cooking class last week in Walnut Creek and chose this one to make.

Oh my gosh! I had forgotten how good it was when I created it when I wrote the cookbook!

I was so happy to have re-discovered it and have added it to the list of recipes that I will make often. It makes a lot and is very filling.

If you don’t have a copy yet, here is the simple Vegetarian, Vegan, Gluten-free and dairy free recipe:

Spinach Mushroom Curry

2 tablespoons water

½ cup chopped onion

1/3 teaspoon TJ’s Crushed Garlic, or 1 clove garlic, minced

3 small potatoes, chopped (can leave skins on)

1 package TJ’s Crimini mushrooms, sliced

1 can TJ’s Garbanzo beans, rinsed

½ cup TJ’s Curry Simmer Sauce

½ cup TJ’s Light Coconut Milk (or use ¼ cup regular coconut milk and ¼ cup water)

2 (6-ounce) bags TJ’s Organic Baby Spinach, or use frozen spinach

1/8 teaspoon curry paste or more to taste, optional

1 teaspoon curry powder or Garam Masala, optional

!/4 cup chopped Cilantro, optional

 

Heat large skillet over medium heat; add water and cook garlic for about 2 minutes. Add potatoes and stir frequently for 4 minutes or until fork-tender when pierced.  Add mushrooms, bean and sauces. Stir while heating for about 2 more minutes. Stir in spinach and cook for another 3 minutes until wilted. Add other spices and cilantro (optional).

Serve with TJ’s Naan (frozen section) or with brown rice.

Serves 4

Per serving:

290 calories, 5 g fat, 535 mg sodium, 51 g carbohydrate, 12 g fiber, 13 g protein

 

Options:

Use TJ’s Masala Simmer Sauce, Yellow Thai Curry Simmer Sauce or Thai Red Curry Simmer Sauce in place of Curry Simmer Sauce.

Use parsnips or cauliflower in place of potatoes.

Use lentils or tofu in place of garbanzo beans.

Use kale in place of spinach or use half spinach and half kale.
