Lentil-Carrot Salad from Trader Joe’s

Have you tried the Steamed Lentils from Trader Joe’s? So easy to use and delicious. They can be used to prepare so many dishes featuring or including lentils. I adapted this recipe from Nutrition Action Healthletter using them to make this Lentil-Carrot Salad from Trader Joe’s.

All you have to do is put together a few healthy shortcut ingredients from Trader Joe’s and voila! you have a delicious dish that can be served as a cold salad or as a warm entree.

Take this to your 4th of July celebration or to any summer gathering where a healthy and hearty dish will be appreciated. High in fiber, it will help you to feel full for a while.

The recipe is vegetarian, vegan and gluten-free.

 

Lentil-Carrot Salad from Trader Joe’s

Serves 4

2 tablespoons lemon juice

2 tablespoons Dijon or yellow mustard

1 tablespoon capers, minced

1/2 teaspoon honey

1 tablespoon olive oil

2 cups Trader Joe’s Steamed Lentils

1 cup Trader Joe’s Shredded Carrots

1/2 cup chopped parsley, dill, mint and/or cilantro

1/2 cup walnuts, chopped

 

Instructions

Whisk together the lemon juice, mustard, capers, honey and olive oil in a small bowl to make a sauce.

Place lentils, carrots, parsley, other herbs and walnuts in a medium-size bowl and add the sauce; toss until blended and serve warm or cold. Add salt to taste, optional.

Note:

I used parsley and mint and it was delicious but play with a combination of different herbs to see which ones you prefer in this recipe.

 

Per serving: 255 calories, 8 g fat, 418 mg sodium, 24 g carbohydrate, 10 g fiber, 11 g protein
